Where reviewers disagree Both agree it is excellent and worth the money, but frame indirect cooking differently: Reviewed calls the oval design's inability to make a two-zone fire a drawback that forces buying the ConvEGGtor, while Pro Tool Reviews presents the ConvEGGtor positively as a must-have add-on rather than a limitation.
The sources (2)
Lowest temp reached (lower vent closed): 150°F · Highest temp reached (vent fully open): 700°F · Charcoal used over a full week of cooking: 10-15 lb · Smoke time on one fuel load (pork shoulder): 6 hours
The versatility of the Big Green Egg really sets it apart from other gas and charcoal grills.
Even after all that cooking, we only used somewhere between 10 to 15 pounds of charcoal.
When it comes to indirect heating, the Egg’s oval design makes it nearly impossible to set up a two-zone fire.
Low-and-slow temp range dialed in: 200-275°F · Max temp reached: over 700°F · Time to stable low temp from lighting: 20 min · Time to reach 700°F from lighting: 30 min · Shrimp sear time at 700°F: ~3 min per side · Tuna sear time at 700°F: ~90 sec per side
By closing the bottom damper about 90% and the upper damper to about the width of a dime, I was able to nail it.
It can also reach temperatures over 700°F—far hotter than other grills can reach safely.
getting a quick sear at these high temps with the darker, crisp outside you're looking for really needs a griddle or cast iron skillet
