Even after all that cooking, we only used somewhere between 10 to 15 pounds of charcoal.
When it comes to indirect heating, the Egg’s oval design makes it nearly impossible to set up a two-zone fire.

By closing the bottom damper about 90% and the upper damper to about the width of a dime, I was able to nail it.
It can also reach temperatures over 700°F—far hotter than other grills can reach safely.
getting a quick sear at these high temps with the darker, crisp outside you're looking for really needs a griddle or cast iron skillet
